- 4 pieces bacon, chopped roughly
- 1 onion, sliced roughly
- 2 big handfuls of kale, stems trimmed away and leaves chopped
- 1 package gnocchi, cooked according to package directions
- 3 cloves garlic, sliced
- 1 tsp olive oil
- 1 handful grated Parmesan cheese
- salt and pepper to taste
- chopped chives, optional
Cook bacon and onion on medium heat for five minutes. Add kale, stirring to prevent sticking, sauté until bacon is cooked through, onions are caramelized and kale is wilted.
Meanwhile, cook gnocchi according to package directions.
Add garlic and olive oil and cook 1 minute. Add drained gnocchi and sauté 1 minute more. Remove from heat and stir in Parmesan cheese. Season with salt and black pepper. Serve hot. Garnish with freshly chopped chives if desired.
